Hot Dogs with Red Onion Sauce

Hot Dogs with Red Onion Sauce

- 2 tablespoons light olive oil for braising
- 2 large onions – peeled and sliced
- 2-3 cloves garlic – peeled and diced
- 1/3 cup ketchup (I used organic ketchup for this recipe, thus the thicker, darker consistency)
- 1/4 teaspoon dried pepper flakes
- 1/4 teaspoon dried cayenne pepper
- 1 tablespoons paprika (smoked or sweet) – I used sweet for this recipe
- 1/4 cup white vinegar
- Water – as needed to reduce the thickness
Preparation
- In a skillet heat olive oil for braising. Add onions and garlic, then cook until the onions and garlic start to lightly to brown. Add ketchup and stir well into onion mixture. Add cayenne pepper, red pepper flakes, paprika, and salt, then stir well into onion mixture. Simmer for 15 minutes. Add white vinegar and simmer for 15-20 minutes. If sauce is getting too thick, you may want to add 2 tablespoons to 1 quarter cup of water, then simmer for another minute or two.
- Serve topping over hot dogs in a bun and add cheddar cheese if desired.
