Toasted Breadcrumbs From Scratch

Ingredients

Toasted Breadcrumbs From Scratch

by Chef Patricia DeMauro
  • 2 cups (approximately) of stale bread
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Preparation

  1. Break stale bread into smaller sized pieces and place in blender. Blend until bread is ground to a breadcrumb consistency.
  2. Add butter into a heated skillet. Melt butter then add olive oil until it lightly sizzles. Add breadcrumbs and stir until all butter and oil have been absorbed and crumbs start to toast. Stir once, then add salt and black pepper. Stir until all the breadcrumbs are moistened. Cook for about a minute. Then stir the breadcrumbs and cook for another minute. If necessary, repeat this step until the breadcrumbs are toasted.
  3. The finished product can be used in the same way you would use any breadcrumbs. I especially like to use on top of mac and cheese while it is baking. These breadcrumbs also go perfectly with my recipes for
Stuffed Peppers With Tri-Colored Quinoa and
Stuffed Meatloaf Topped With Whipped Yukon Gold Potatoes.

Be creative and and Mangia!
