Mock Chicken Stir Fry

For those nights when you want stir fry but don’t have all the ingredients-go for it and enjoy!! This dish is flavorful and quick. I am calling it “mock” because it is a very quick stir fry and doesn’t have all the authentic ingredients, but it is sooo tasty and easy to make.
INGREDIENTS
• 1 1/2 pounds chicken breast
• 1 tablespoon corn starch
• 1/4 cup water
• 2 carrots
• 1 onion
• 2 cloves garlic
• 1 – 16 ounce package frozen stir fry vegetables
• 2 tablespoons oil (you can also use soybean, peanut, vegetable, canola, corn or refined coconut oil). For this recipe, I used vegetable oil.
• 1 teaspoon salt
• 1 teaspoon black pepper
• 2 teaspoons ginger (I used pickled ginger in a jar, but you can use freshly grated ginger or ginger paste)
• 2 tablespoons soy sauce (I used less-sodium soy sauce)
PREPARATION
1. Cut the chicken into medium strips – set aside.
2. Add corn starch and water.
3. Wash and peel two fresh carrots and cut julienne style. Peel 1 onion and cut into strips. Mince 2 – 3 cloves fresh garlic.
4. Cook the frozen stir vegetables, then drain to remove excess water and place drained vegetables in a bowl lined with paper towels. This will help remove excess water.
5. Heat a skillet (or wok) until moderately warm, then add the oil.
6. Add the chicken to the skillet in small batches and stir the chicken often until each batch lightly browns.
7. As each batch browns, remove from the skillet and set chicken aside on a large serving dish. If you need to add more oil, do so when there is NOT any chicken in the skillet, then heat the oil, then add the chicken. Do not add additional oil when the chicken is in the skillet or wok.
8. Add the onion and garlic and cook until browned. Remove from the skillet and place on top of the cooked chicken. Add the carrots and cook in the skillet or wok until cooked – al dente
9. Add the cooked stir vegetables to the skillet. Then add the chicken, onion and garlic mixture and carrots to the skillet. Then add the corn starch and water and mix well. Then add soy sauce, mix well, and and cook 5 – 10 minutes.
10. Serve over rice of your choice, or fried cauliflower (look for the recipe for stir fried cauliflower on Mangia Perfecto site).
Serves 2 – 4
