BBQ Wings – Juicy, Crisp, Delicious

BBQ Wings – Juicy, Crisp, Delicious
by Chef Patricia DeMauro

I like to start off cooking my wings in a crockpot then finish cooking in the oven to obtain crispiness.  I find that the step of cooking the wings in a crockpot first, helps to prevent a mess in the oven.

INGREDIENTS

• 2 1/2 pounds of chicken wings
• 2 cups BBQ sauce of your choice. Check out our Mangia Perfecto BBQ Sauce, or use your favorite BBQ sauce.
• 1 teaspoon salt
• 1 teaspoon black pepper

PREPARATION

1.  If you bought wings with the tips, chop them off and then rinse wings under cold water, then pat dry with paper towels.

2.  Place all of the wings in a crockpot and add 1 1/2 cups of BBQ sauce. Set aside 1/2 cup of the BBQ sauce for later use. Mix the wings until you are sure that all of the wings are coated with the BBQ sauce. Add salt and black pepper.

3.  Cover the crockpot and cook on low temperature 4 – 6 hours. After 4 – 6 hours remove the wings from the crockpot and place in a roasting pan. Use only 1/4 cup of the juices from the crockpot to cover the wings in the roasting pan.

4.  Cook in a preheated at 375 degrees for 1 to 1 1/2 hours. After 20 minutes turn the wings over in the roasting pan and remove excess juices in the pan. Using the BBQ sauce you have set aside, baste the wings with the BBQ sauce using a basting brush. After another 20 minutes have passed, turn the wings over and baste some more BBQ sauce onto them. Place the wings back in the oven to continue baking. Be sure to turn the wings over every 20 minutes and baste with BBQ sauce.

5. After each 20 minutes of cooking, remove any excess juices from the pan. Each time you turn the wings over before you baste them, it is very important to remove any excess juices, as doing so will keep your wings crispy.
6. After an hour, if you want your wings darker in color and with more crispiness, cook for another 20 minutes and be sure to follow the steps. Remove excess juices, turn wings over and baste with a basting brush. Keep a watch so your wings do not burn!
7. Serve with ranch dressing or blue cheese dressing, or any dip of your choice.
