One-Pan Salmon, Portobello and Basil

One-Pan Salmon, Portobello and Basil

INGREDIENTS
• 2 tablespoons extra virgin olive oil
• 4 cloves garlic
• 1 cup water
• 1 red onion
• 1/2 teaspoon sea salt
• 1/2 teaspoon fenugreek
• 1/2 teaspoon coriander
• 1/2 teaspoon black pepper
• 1 portobello mushroom
• 4 fresh basil leaves
• 1/2 pound salmon
PREPARATION
1. Coat bottom of skillet with olive oil and water. Cut garlic cloves into small pieces, then spread those around the skillet. Chop the red onion and spread the pieces evenly around the skillet.
2. Put the spices (sea salt, fenugreek, coriander, black pepper) into a small bowl and mix. Now take half of this mixture and spread evenly around the skillet.
3. Cut the mushrooms into strips and place in the skillet. Place 2 of the basil leaves in the bottom of the skillet. Cut the salmon into 2 strips and place on top of the basil leaves in the skillet.
4. Now take the other half of the spice mixture and spread evenly on top of the salmon and mushrooms. Place the other 2 basil leaves on top of the salmon strips. Then slowly bring to a boil. You want the heat to raise slowly, so that it doesn’t burn. When the water begins to boil, lower the heat so that the water simmers. Simmer for 15 to 20 minutes.
5.Grab a spoon to scoop the juice from the bottom of the skillet and pour it over the salmon and mushrooms.
Serves 1 to 2
