One-Pan Sausage with Spinach and Tomatoes

INGREDIENTS
• 1 tablespoon extra virgin olive oil
• 3 cloves garlic
• 1/2 cup water
• 1 teaspoon red pepper flakes
• 1 teaspoon coriander
• 1/2 teaspoon black pepper
• 1/2 teaspoon paprika
• 1/2 teaspoon salt
• 1/2 teaspoon fenugreek
• 6 sausage links
• 1 tomato
• 1 cup spinach (frozen)
• 1 Italian pepper
PREPARATION
1. Dice the garlic cloves. Heat pan on low and put olive oil, diced garlic cloves and water into it.
2. Put spices (red pepper flakes, coriander, black pepper, paprika, salt, fenugreek) into a bowl or ramekin and stir to combine them. Then pour half of the contents of the bowl into a skillet.
3. Put the sausage links into the pan. Raise heat halfway on the stove to slowly bring the water to a boil. Once the water begins to boil, then lower the heat to a simmer, cover the pan with a lid and simmer for 12 minutes.
4. Now that the sausage is simmering, dice the tomato and Italian pepper. Grab the spinach from the freezer. Put the tomato, Italian pepper and spinach into the pan, then put the other half of the spice mixture onto the pan. Raise the heat of the stove to full and bring the water to a boil. Let it boil for 2 minutes to soften the frozen spinach, then stir the spices into the tomato, Italian peppers and spinach. Cover with a lid and lower the heat to a simmer for 12 minutes.
Serves 1 to 2
Quick Notes
• Using a meat thermometer, make sure that the internal temperature of the pork reaches 145°F. This is the recommended minimum temperature recommended by the USDA for pork.
