Portobello Mushrooms Stuffed With Yam and Sausage

INGREDIENTS

• 1 large yam
• 1/4 teaspoon black pepper
• 1/4 teaspoon garlic powder
• 1/4 teaspoon onion powder
• 1/4 teaspoon cumin
• 1/4 teaspoon salt
• 1/4 teaspoon paprika
• 2 teaspoons olive oil
• 4 portobello mushrooms
• 1 slice of onion
• 1 stalk of celery
• 1 plum tomato
• 10 extra large black olives
• 2 sausage links
• 1/4 cup water

PREPARATION

1. Start with peeling the skin of the yam. Cut it into pieces. Microwave the yam until it’s soft enough to mash. Our small sized microwave took 7 minutes on high. Your microwave oven’s time may vary.

2. As the yam is cooking in the microwave oven, put spices (black pepper, garlic powder, onion powder, cumin, salt, paprika) into a bowl or ramekin, and stir to combine them.

3. When the yam is soft enough, put it into a bowl and mash it with a fork. Pour in the olive oil and spices and stir them to make a nice, thick paste.

4. Chop and dice the onion, celery, tomato and black olives. You want to dice them into small pieces, because this is what you will spoon into the mushroom. So chop these ingredients, then add to the yam mash and stir them in.

5. Put the sausage links and water into a cooking pan. Bring to a boil, then simmer for 5 minutes to harden up the sausage so you can slice it. When the sausage is firm, then slice it into small bits. Then stir the sausage bits into the yam mash.

6. Clean and wash the portobello mushrooms. Remove the stems and the gills (black portion on the underside) with a spoon and discard them.

7. Preheat oven to 350°F. As the oven is heating up, scoop the yam mash with a spoon and put the scoops into the portobello mushrooms. When the mushrooms are stuffed, then coat a skillet or baking sheet with olive oil. Place the stuffed mushrooms onto the oiled pan and cook at 350°F for 25 minutes.

8. After 25 minutes in a 350°F, take the skillet out of the oven. Let it cook for a few minutes and serve.
