Cod fish baked in foil with vegetables.

The aroma and taste are fragrant and delicious! A sure to repeat recipe.
INGREDIENTS
• 1/2 pound fresh cod
• 1/2 teaspoon salt
• 1/2 teaspoon black pepper
• 1/2 tablespoon ginger
• 1/2 fresh onion
• 1/2 fresh zucchini
• 2 fresh carrots
• 1/2 cup pea pods
• 1 fresh lemon
• 1/2 cup extra virgin olive oil
• 2 – 3 cloves fresh garlic
• 2 – 3 small red potatoes
• 1/4 cup fresh oregano
• 3 – 4 leaves fresh basil
PREPARATION
1. Cut two strips of aluminum foil approximately twice the size of the cod and set aside. Set aside salt and black pepper. Peel and cut into fine strips ginger. Peel and cut onion into strips. Rinse zucchini under cold water and cut into strips. Rinse carrots, then peel, then cut into strips. Rinse pea pods, then set aside. Rinse lemon under cold water and cut the lemon in half, then cut the other half into thin slices. 1/2 of the lemon will be used for juice, and the other 1/2 will be cut into slices for the top of the cod. Peel garlic and cut into pieces. Rinse red potatoes under cold water and cut into thick slices.
2. Place the strips of aluminum foil on a cookie sheet. You will be placing one sheet horizontally and the other piece vertically over the first piece.
3. Rub the cod on both sides with 1/4 cup extra virgin olive oil and place the cod on the aluminum foil. Season each side of the cod with salt and black pepper. Place ginger and garlic on top of the cod. Squeeze fresh lemon juice on cod. Place all fresh vegetables on top and sides of the cod. Drizzle the vegetables and cod with the remaining extra virgin olive oil. Add fresh oregano and basil leaves. Top with fresh lemon slices.
4. Wrap the foil above the cod like a tent, leaving a space of at least 6” to 8 “ from the cod to the top of the foil tent then make a tight fold. Also, fold the sides of the foil tightly so all ingredients are secure. Place the foil tent on a cookie sheet and bake the cod in a preheated over 350 deg for 1/2 hour. The cod is baked in the oven, but will be steamed-cooked to perfection, while it is inside of the foil tents.
5. When opening the foil tent be careful the steam doesn’t hit you in the face! When cooked, the cod should flake when cut with a fork . The vegetables should be cooked soft but still a bit firm (Al dente). When you unfold the tents, the aroma and taste will be fragrant and delicious! I served with fresh cooked broccoli and rice. You can choose either white or brown rice.
