Beef and Broccoli – Slow Cooker

A warm and spicy meal that will fill your appetite.

INGREDIENTS

• 1/2 cup soy sauce
• 1/2 cup honey
• 4 garlic cloves
• 2 jalapeño peppers
• 1/4 teaspoon lemon flavor
• 1 cup water
• 1 to 2 tablespoons corn starch (optional)
• 2 inches ginger root
• 1 yellow onion
• 2 pounds beef – I used London broil
• 2 cups broccoli
• 1 tablespoon sesame seeds

 

PREPARATION

1. Sauce – Mince garlic cloves and ginger, chop jalapeño peppers and yellow onion. Then put those in the slow cooker.

Also add to the slow cooker, soy sauce, honey, lemon flavor (if you don’t have a bottle of lemon flavor, then get a fresh lemon and grate some fresh lemon zest), water, and corn starch.  The corn starch is optional.  If you would like your sauce to be thick, then add the cornstarch.  Whisk them all together in the slow cooker.

2. Beef – Cut the beef into thin slices.

3. Add beef to the slow cooker – and stir it into the sauce to combine.  Set the slow cooker on low, and cook for about 5 to 6 hours.

4. Broccoli –  In the last hour, add the broccoli and gently stir it in.

5. Serve – Garnish with sesame seeds. We served this over jasmine rice.

Serves 3 to 4
