Lemon-Ginger Chicken Drumsticks

INGREDIENTS
• 1 tablespoon olive oil
• 1/8 teaspoon coriander
• 1/8 teaspoon fenugreek
• 1/8 teaspoon dried garlic
• 1 teaspoon salt
• 1 small red onion
• 1 small red pepper
• 1 tablespoon fresh ginger root
• 3 slices of lemon
• 1/2 cup water
• 1/8 teaspoon crushed red pepper
• 3 chicken drumsticks
• 1 medium sized red potato
PREPARATION
1. Heat skillet on low. Pour in olive oil and water.
2. As the skillet is heating up, chop red onion and red pepper, slice the lemon and finely chop the ginger root.
3. Sprinkle the red pepper, coriander, fenugreek, dried garlic and salt into the skillet. Put the onions, red pepper, ginger root and sliced lemon into the skillet.
Try to lay the lemon slices flat down in the water, so that the lemon juice flavor infuses water as it cooks out.
Also put the ginger root at the bottom of the skillet (not on top of onions or peppers) so that the ginger juice flavor also infuses the water.
4. After a few minutes of simmering the spices and veggies, add the chicken drumsticks to the skillet. Cover and simmer on low for 5 minutes.
5. After 5 minutes turn the drum sticks over so they cook evenly. Simmer for another 15 minutes.
6. In the meanwhile put the red potato in a microwave oven and cook on high for 5 minutes. This timing is for a small 700 watt microwave oven, so if your microwave oven is bigger, please adjust time accordingly.
7. Mash cooked red potato with a fork. Spoon the lemon-ginger sauce from the skillet, over the potato.
8. Transfer cooked food to plate.
