Pork Chops Pizzaiola

Pork Chops Pizzaiola in the oven – One Dish Meal

INGREDIENTS

• 3 loin pork chops with the bone
• 1 1/2 cups of your favorite Italian marinara sauce that has been cooked ahead of time or you may want use your favorite jarred sauce.
• 1/2 cup extra virgin olive oil

VEGGIES

• 3 Yukon Gold potatoes
• 4 carrots
• 1 onion
• 2 scallions

GARNISH

• Fresh parsley

SEASONINGS

1/2 teaspoon salt
1/2 teaspoon ground black pepper
1/2 teaspoon garlic salt
1/2 teaspoon Herbs de Provence
1/2 teaspoon red pepper flakes

PREPARATION

1. Place pork chops in a baking pan and set aside.

2. Prepare and cook your favorite Italian marinara sauce, then set it aside.

3. Wash and peel potatoes, then cut in quarters lengthwise. Wash and peel carrots, then cut into in cubes. Coarsely cut the scallions. Finely chop the fresh parsley.

4. While the chops are in the baking pan add 1/4 cup extra virgin olive oil to it. Place the potatoes, onions, carrots and scallions around and chops, and also cover the chops with the vegetables and spices.

5. Pour the Italian marinara sauce over the pork and vegetables. Sprinkle the parsley over the chops and vegetables. Pour the remaining 1/4 cup olive oil over the chops and vegetables.

6. Place the baking pan with the pork and vegetables in a preheated oven that is set to 375 degrees F. Cook for 45 minutes or until the chops are browned and the vegetables are cooked. Test pork chops with meat thermometer. The internal temperature of the chops should be between 145 degrees to 160 degrees F.

Serves 2 to 3 people.  

Quick Notes

• Using a meat thermometer, make sure that the internal temperature of the pork reaches 145°F.  This is the recommended minimum temperature recommended by the USDA for pork.
