Ingredients

3 Avocado Toast Sandwiches In 3 Minutes

Avocado spread

  • 3 ripe avocados
  • 2 teaspoons sea salt
  • 2 teaspoons black pepper
  • 2 teaspoons garlic powder

Salmon Avocado Sandwich

  • 2 slices whole wheat bread, toasted
  • 2 tablespoons avocado spread
  • 3 tablespoons cooked salmon
  • 2 tablespoons red onion, chopped
  • 2 tablespoons cherry tomato, sliced
  • 2 teaspoons black olives, chopped
  • 1 teaspoon, fresh parsley, chopped
  • 1 slice lemon

Turkey Avocado Sandwich

  • 2 slices whole wheat bread, toasted
  • 2 tablespoons avocado spread
  • 2 stalks scallion (green onion)
  • 2 thin slices green bell pepper
  • 1 radish sliced
  • 4 thin cucumber slices
  • 1 tablespoon cherry tomato slices
  • 1 tablespoon grated carrots
  • 2 slices deli turkey
  • 1 teaspoon extra virgin olive oil

Chicken Salad Avocado Sandwich

  • 2 slices whole wheat bread, toasted
  • 2 tablespoons avocado spread
  • 2 pickle slices
  • 3 tablespoons chicken salad
  • 1 tablespoons cherry tomato, sliced
  • 2 thin slices green bell pepper
  • 2 stalks scallion (green onion)
  • 1 teaspoon olive oil

Chicken Salad Spread (This is enough for 2 to 4 sandwiches)

  • 1 cup Chopped cooked chicken
  • 1/4 tablespoons black olives
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper

 

Preparation

Avocado spread

  1. In a sturdy bowl, mash the avocados until their consistency is smooth.
  2. Add the sea salt, black pepper and garlic powder.  Stir with a fork to blend their flavors together.

Toast the whole wheat bread

Salmon Avocado Sandwich

  1. Use a knife to distribute the avocado spread evenly on both slices of toast.
  2. On one slice of toast, layer the cooked salmon, red onion, cherry tomato, black olives and parsley.
  3. Squeeze juice of lemon slice over those layers.
  4. Top with the other slice of bread.

Turkey Avocado Sandwich

  1. Use a knife to distribute the avocado spread evenly on both slices of toast.
  2. On one slice of toast, layer the scallion, green bell pepper, radish, cucumber, tomato, carrots and deli turkey.
  3. Lightly drizzle extra virgin olive oil over over those layers.
  4. Top with the other slice of bread.

Chicken Salad Spread

  1. Chop the cooked chicken into small, bite-sized bits.
  2. In a medium bowl, combine the chopped chicken, black olives, olive oil, salt and pepper.  Mix together with a fork.

Chicken Salad Avocado Sandwich

  1. Use a knife to distribute the avocado spread evenly on both slices of toast.
  2. On one slice of toast, layer the pickles, chicken salad, tomato, green bell pepper, and scallion.
  3. Lightly drizzle extra virgin olive oil over over those layers.
  4. Top with the other slice of bread.
