Big Jersey Breakfast – Taylor Ham / Pork Roll, Bacon, Egg

  • 4 slices bacon
  • 2 slices Taylor ham / pork roll
  • 2 tablespoons butter
  • 1 tablespoon vegetable oil
  • One half onion – peeled and coarsely chopped
  • 4 small to medium potatoes
  • One half teaspoon salt
  • One teaspoon black pepper
  • 2 eggs
  • One half avocado
  • One orange – sliced
  • One English muffin
  • 2 tablespoons – ketchup

Preparation

  1. Heat a non-stick skillet or use a sauté pan. Then add 4 slices bacon and 2 slices Taylor ham / pork roll and cook to your desired consistency. I like my bacon cooked on the crispy side but not over done. I like Taylor ham the same way.
  2. Cook potatoes until medium but not soft. Before sautéing, cook potatoes on a plate covered with damp paper towels in a microwave for about 5 minutes. Then dice them.
  3. Heat a non-stick sautê pan, then add butter and melt it. Then add vegetable oil. Add chopped onion and cook until onion starts to soften. Then add diced garlic clove. Continue cooking until onion and garlic start to brown.
  4. Sauté diced potatoes in pan. Add salt and pepper. Continue cooking potatoes until all sides are browned. Remove potatoes from sauté pan, then transfer to a paper lined plate, which will absorb excess butter and oil.
  5. Clean the sauté pan and melt 1 tablespoon of butter. Gently crack one egg in melted butter. Then cook until the egg white starts to go from translucent to solid white. Add salt and black pepper. Then with a non-stick spatula, gently flip the egg and cook about 1 minute. Repeat the process for the second egg.
