Blueberry Smile Pancakes

Start your day with a smiley breakfast!
Dry
- 1 and one half cups all purpose flour combined with 2 tablespoons sugar
- 1 tablespoon baking powder
- One half teaspoon sea salt or table salt
Wet
- 1 and one quarter cups warm milk
- 1 large egg
- 4 tablespoons melted unsalted butter
- one half teaspoon vanilla extract
Preparation
- Dry ingredients. Sift flour and sugar into a mixing bowl. Then add baking powder and salt. Mix well.
- Wet ingredients.Add wet ingredients to another mixing bowl and whisk well. Then add wet ingredients to the bowl with the dry ingredients, and mix well with a wooden spoon. Once wet and dry ingredients have been mixed thoroughly, give a quick few stirs to this mixture with a whisk to remove any clumps that may have formed.
- Heat skillet.Heat a non stick skillet or griddle (electric skillet 375 degrees F). Test cooking readiness by sprinkling a dash of water onto the skillet or griddle. When the water sizzles and evaporate, the skillet or griddle is ready for use. Lightly brush skillet or griddle with shortening.
- Make Pancakes.Add one quarter cup of pancake mixture to skillet and cook for about about 2 – 3 minutes. The edges of the pancake will lightly brown and puckers will form. Then add fresh blueberries, making a smiley face. Add two blueberries for the eyes, one for the nose and four to five for the mouth. Continue cooking pancakes for another 2 – 3 minutes and flip when the center of the pancake starts to get firm and edges turn to a deeper brown. Cook the second side of the pancake about 2 – 3 minutes. Blueberries will flatten but that is okay!! Gently raise and end of the pancake from skillet or griddle to see if it is browned. Remove pancake to a servings plate flipping the pancake over so the blueberries are smiling up at you!!
- Serve with butter and/or syrup.
