CHEESE BURGER WITH AVOCADO AND BACON

- 2 – 5 to 6 ounces chopped beef (I used Angus beef)
- 2 Brioche rolls
- 1/2 tablespoons cooking oil (I used olive oil)
- 2 slices avocado
- 1 to 2 slices of red onion
- 2 slices beefsteak tomato
- 1/2 cup shredded lettuce
- 2 slices cooked bacon
Preparation
- Lightly toast rolls and set aside
- Cook bacon I cooked the bacon on the well done side, then I set it aside
- Caramelizing onions – Chop the onion. Then in a moderately hot skillet add 2 tablespoons cooking oil and 2 tablespoons butter. Melt the butter then add the chopped onion, 1 teaspoon salt and 1 teaspoon of black pepper. Continue cooking onions on moderate heat and stir often. It will take about 15 to 20 minutes for the onions to caramelize. It is important to stir often so the onions cook evenly and do not burn. When the onions are caramelized set them aside in a dish that you have lined with a paper towel to absorb the excess oil and butter.
- Cooking burgers – Heat a skillet until moderately hot and spray with 1/2 tablespoon cooking oil. Place two burgers in the skillet and season with 1/2 teaspoon salt and 1/2 teaspoon of black pepper. Cook on each side 2 to 3 minutes. Be sure to season both sides of burger with salt and black pepper. On the second flip of the burger after 1 to 2 minutes of cooking, place two slices of cheese on each burger and cover the skillet. Continue cooking for another 2 minutes or until the cheese melts.
- Topping the cheese and bacon burgers – Place one cooked burger with the cheese onto one of the bun halves. Top with two heaping tablespoons caramelized onions, then top with cooked bacon. Coat the other half of the bun with ketchup and mustard (I used spicy brown mustard for these burgers).
