Juicy Bacon Wrapped Meatloaf With Spicy Glaze Topping

Ingredients

Meatloaf With Spicy Glaze Topping

MEATLOAF

  • 1 cup diced bacon
  • 1 onion
  • 2 tablespoons bacon fat
  • 3 to 4 cloves garlic
  • 1 and 1/2 cup bread crumbs
  • 1/2 teaspoons salt
  • 1/2 teaspoons black pepper
  • 2 teaspoons thyme
  • 2 teaspoons sage
  • 1 tablespoons brown mustard
  • 1/2 cup ketchup (1/4 cup for mixture and 1/4cup for top)
  • 1/4 cup warm water (boil water then let it cool to warm)
  • 2 large eggs
  • 3 tablespoons parsley (fresh or dried)
  • 2 pounds ground beef

SAUCE

  • 1/3 cup brown sugar
  • 1/2 cup ketchup
  • 1/2 cup BBQ sauce
  • 2 tablespoons apple cider vinegar
  • 1/4 to 1/2 teaspoon crushed red pepper flakes

Preparation

  1. Cut bacon into small pieces and cook 3 to 4 minutes. Set the bacon aside to cool down.
  2. Discard all but 2 tablespoons of bacon fat. Cook onion on low for 3 to 4 minutes. Then add garlic and cook for 2 minutes.
  3. In a large bowl (bowl 1), mix onion and garlic mixture, bread crumbs, salt, black pepper, thyme, sage, mustard, ketchup, warm water, eggs, parsley.
  4. In another large bowl (bowl 2), mix ground beef and bacon. Then mix the contents of bowl 1 with bowl 2 and combine all ingredients, and gently mix until ingredients are combined, but do not over mix as the meat may get tough.
  5. Line the bottom of a baking pan with parchment paper and place bacon strips horizontally and vertically in the pan. Overlap the bacon strips and line pan with enough bacon to cover over the meatloaf. We used 9 bacon strips, but it’s okay to use more. Place the meat over the bacon, and shape the prepared meat into a rectangle loaf. After wrapping the meat loaf with the bacon strips, rub the top and sides with 1/4 cup ketchup.
  6. Cook in oven heated to 350 degrees F, for 45 minutes. Afterwards, add the sauce topping to the top and sides of the meatloaf. The sauce recipe is below.
  7. Prepare the spicy sauce topping, as the meatloaf cooks. Combine in a bowl, brown sugar, ketchup, BBQ sauce, apple cider vinegar, red pepper flakes. Stir well, then set aside.
  8. When the meat has cooked for 45 minutes, take it out of the oven and baste the sauce topping, over the top and sides of the meatloaf. Turn the temperature of the oven to 375 degrees F, and cook another 20 to 30 minutes. Before removing from the oven, check the internal temperature of the loaf to insure that it is at least 160 degrees F.
