Quick and Easy Pasta With a Twist

- 1 pound pasta of your choice
- 2 tablespoons olive oil
- 1 yellow onion
- 3 cloves garlic
- 1 and 1/2 pounds ground beef. For this recipe, we used meatloaf mixture of ground beef, veal, pork.
- 2 cans 10.75 ounce each tomato soup
- 1 four ounce can green peas
- 2 tablespoons garlic powder
- 2 tablespoons oregano or Italian seasonings
- 1 tablespoon salt
- 1 tablespoon black pepper
- 2 tablespoons dry parsley
- 3/4 to 1 cup water
- 1 and 1/2 cups grated parmesan cheese
Preparation
- Cook pasta according to package directions and set aside in a large serving dish and sprinkle with olive oil to keep from sticking, or add 1 pat of butter to pasta and mix well, coating the pasta.
- Peel onion and dice. Peel garlic, remove skin and mince.
- In a heated skillet add oil and meat until lightly sizzling then add chop meat and break meat apart with a wooden spoon until meat gets crumbly. Stir until meat is browned. Then add onions and garlic and stir for 3 to 5 minutes.
- Add 2 cans tomato soup and water. Then add peas. Mix well. Add seasonings listed above
and continue to cook until a light boil. Continue to cook for 20-25 minutes If you need to add more water – do so and then cook another 3-5 minutes. - Serve meat mixture over pasta and add a generous amount of grated parmesan cheese on top.
- This is sure to please everyone. A very flavorful, light, quick, pasta sauce.
