Sausage and Pepper Medley! Bursting with flavor and quick to prepare.
Sausage
8 links sweet sausage, 8 links spicy sausage
1/3 cup extra virgin olive oil
Veggies and spices
4 cloves garlic, minced
2 cups white onion, chopped
1 each, green, yellow, red bell pepper, thinly sliced
3 golden potatoes, thinly sliced
1 teaspoon ground peppercorn
2 teaspoons sea salt
Preparation
Boil golden potatoes – Put 6 golden potatoes into a pot. Cover with water. Bring to a boil. Lower heat and simmer for about 5 minutes. Do not boil until they are completely soft, as in an upcoming step, we will also sauté them.
Cook sausage – Begin by simmering water in skillet. Add sausage. Simmer at about 400°F. After 10 minutes, cut links in half. Wait another 5 minutes, then drain water and add 1/3 cup olive oil. Leave in medium heat until golden brown (about 10 minutes). Use a meat thermometer to check the internal temperature is 165 degrees before serving.
Prep veggies – While you wait for sausage to cook to a nice golden brown color, start chopping and slicing the veggies.
Sauté – Add in garlic, onion, peppers, potatoes, peppercorn and salt. Then stir to coat them in hot oil and diffuse their own flavors. Cover and heat at 350°F for 10 minutes.
Serves 4 to 6
