Steak and Broccoli – One Man’s Leftover Is Another Man’s Treasure

Ever wonder what to do with your leftover take home food? I had prime rib steak, broccoli and small yellow potatoes leftover from dinner the night before.  Well, let me show you how to turn all of that into a new, delicious dish for two.

INGREDIENTS

LEFTOVER INGREDIENTS

• 5 – 6 ounces prime rib
• 1 cup broccoli
• 1/2 cup small yellow potatoes

STEAK – If you do not have leftover Prime Rib or any left over steak and you want to make this dish, buy a steak of your choice.  For this recipe I used prime rib.

• 5 – 6 ounces of prime rib or any steak of your liking.
• 1/4 teaspoon olive oil
• 1/4 teaspoon salt
• 1/4 teaspoon coarse black pepper
• 1/4 teaspoon garlic power

FRESH INGREDIENTS

• 1/4 teaspoon salt
• 1/4 teaspoon black pepper
• 1 tablespoon cooking oil of your choice (I use cooking type olive oil)
• 1 onion
• 2 cloves garlic
• 1 teaspoon corn starch
• 1/4 cup soy sauce (I use the less sodium type)

PREPARATION

1. Slice the cooked prime rib into medium size strips. Season it with salt and pepper, then set aside on a plate.  If you do not have leftover steak, see preparation of fresh steak below.

2. In a sauté pan or skillet, heat oil until moderately hot, then add onion and garlic, and cook until they are lightly browned. Stir often so that they do not burn.
3. If you are using fresh broccoli, steam cook in boiling water and add salt and black pepper. When broccoli is cooked al dente, drain to remove excess water. Add broccoli to oil and cook for 3 to 5 minutes. Then add the cooked prime rib that has been cut into strips, and cook on low to warm, but do not over cook.


4. Dissolve corn starch in water about 1 tablespoon water and soy sauce. Stir all ingredients well, then pour it over the meat and broccoli mixture. Cook on low for about 10 minutes until hot.

5. Serve over any type of rice of your choice or for less carbs serve over riced cauliflower that has been cooked and drained according to package directions

PREPARATION – of fresh steak if you do not have leftover.

1. Pour a small amount of olive oil in the palm of your hand and rub over both sides of the steak. Then season the steak on both sides with salt, black pepper and garlic powder.
2. Next broil the steak on low for approximately 8 minutes on each side (medium). You do not want to over cook the steak at this point because it will be cooking again, when you prepare the broccoli and steak dish.

Serves 2 to 3
