Stuffed Meatloaf Topped With Whipped Yukon Gold Potatoes

INGREDIENTS

2 pounds chopped beef (85/15 blend)
1 pound package frozen spinach

green leaves

2 small (or 1 large) onions
3-4 cloves garlic
1 cup ketchup
2 cups cheddar cheese
2 eggs
1/2 cup breadcrumbs (unseasoned)
1/4 cup olive oil (cooking variety) or vegetable oil
1/4 teaspoon salt
1/4 teaspoon black pepper
6-8 yellow Yukon Gold potatoes
1/4 cup warm milk
1/4 cup butter

PREPARATION

Spray bottom and sides of a bundt pan with vegetable oil

Make Spinach Mix

Cook frozen spinach according to package directions.
Place cooked spinach in strainer and pat dry with a paper towels, then set aside.
Chop onion, then set aside
Smash and dice garlic cloves, then set aside
Coarsely grate cheddar cheese, then set aside
Heat skillet at medium heat setting, then and add oil.

Add onions and sauté until onions start to lightly brown. Then add diced garlic and caramelize both.
Add the following to onions and garlic,
cooked spinach
salt
black pepper
Stir all ingredients, then cook for approximately 5-8 minutes.
Place spinach mixture on a plate lined with paper towels and set aside.
Divide mixture into 3 equal parts.

Preparing and Cooking Meatloaf

Add to the chopped meatloaf the following ingredients,
breadcrumbs.
Add 2 – 3 tablespoons warm water to breadcrumbs, then set aside.

salt
black pepper
Mix all ingredients well and divide into 3 equal parts, then set aside

On the bottom of bundt pan lightly add ketchup and spread evenly around the pan
Add cheddar cheese and spread evenly around the pan

Layers

Layer 1
add 1/3 meatloaf mixture and spread evenly over the ketchup and cheddar cheese around the bottom of the pan
Add 1/3 spinach and 1/4 cup cheddar cheese to the top of the meatloaf and spread evenly

Layer 2
add 1/3 meatloaf mixture and spread evenly on top of spinach and cheese, then press down lightly
Add 1/3 spinach mixture and 1/4 cup cheddar cheese

Layer 3
Add final 3rd of chopped beef and lightly press down
After the layers are prepared poke about 6 – 8 holes around the top to bottom of meatloaf
Fill holes with spinach mixture and remaining cheddar cheese
Once the holes are filled, spread ketchup evenly around the meatloaf and closing the holes.
Place in preheated oven at 375°F and bake for approximately 45 to 60 minutes.

 

In the meantime while meatloaf is baking –

Make mashed potatoes

Wash and peel the yukon gold potatoes, then cut in quarters.
Boil potatoes until soft enough to mash but not mushy
Add 1/4 cup warm milk and 1/4 cup butter
Salt and pepper to taste
Mash the potatoes and set aside until meatloaf is fully cooked.

When meatloaf is fully cooked let it rest until thoroughly cooled down
Drain any liquids (grease) from beef and discard
Then place a large round serving dish on bottom of bundt pan and turn over so meatloaf is on the dish
Place meatloaf on cookie sheet and cover the top and sides with mashed potatoes

If you would like the potatoes lightly browned, then place a cookies sheet with meatloaf in oven on boil
for 5 minutes.

Place meatloaf on a serving platter to serve.
