Sweet and Spicy Agave Glazed Pork Chops

INGREDIENTS

SKILLET

• 4 ounces of water
• 1 teaspoon olive oil
• 1/4 teaspoon salt
• 1/2 teaspoon lemon pepper powder
• 3 boneless pork chops
• 4 ounces green peas

AGAVE GLAZE

• 1/4 cup agave nectar
• 1 teaspoon cayenne pepper
• 1 teaspoon garlic powder
• 1 teaspoon onion powder
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper

SIDE

• 1 medium sized red potato

PREPARATION

1. Place water, olive oil, salt and lemon pepper in a skillet, then heat on low.
2. Meanwhile in a small bowl, place the agave nectar, cayenne, garlic powder, onion powder, salt and black pepper. Mix these ingredients together with a fork or spoon.

3.  Rub this glaze onto both sides of the pork chops. Make sure to coat each side evenly.


4.  Now raise the heat on the skillet to medium heat. Add the pork chops to the skillet and cook for 10 minutes.

Then add the peas and cook for another 10 minutes, and spoon the juices in the skillet over the peas to give them some of that delicious glaze flavor.


5.  In the meanwhile put the red potato in a microwave oven and cook on high for 5 minutes. This timing is for a small 700 watt microwave oven, so if your microwave oven is bigger, please adjust time accordingly.

Serves 1 to 2


Quick Notes

• Using a meat thermometer, make sure that the internal temperature of the pork reaches 145°F.  This is the recommended minimum temperature recommended by the USDA for pork.
• If you don’t have agave syrup, then use honey.
• If cayenne pepper is too spicy for you, then substitute paprika or a mild chili powder.
